Ingredients

  • 1 1/2 cups butter room temperature
  • 1 1/2 cups granulated sugar
  • 1 vanilla bean opened and seeds scraped out
  • 2 eggs + 1 extra yolk
  • 1 tablespoon grated orange zest
  • 3 3/4 cups all-purpose flour
  • 1 1/2 teaspoon cardamom spice
  • 1 teaspoon baking powder
  • 1 teaspoon salt

Instructions

  • Sift together the flour, baking powder, cardamom spice and salt.
  • Using an electric mixer beat the butter and sugar until light and fluffy, about 5 minutes.
  • Mix in the vanilla bean, then add the eggs and orange zest.
  • Add the flour mixture and blend until combined.
  • Separate the dough into 3 disks and wrap in plastic wrap. Place in the fridge and chill for at least one hour.
  • When ready to bake, preheat the oven to 350ยบ Fahrenheit . Line cookie sheets with parchment paper.
  • Remove one disk at a time. Lightly dust work surface with flour. Roll the cookie dough to 1/8 - 1/4 inch thickness.
  • Dust the cookie cutters with flour, then cut the dough into desired shapes.
  • Transfer the cookies to the baking sheet.
  • Bake for 7-9 minutes. Just until the edges start to brown.
  • Cool on wire rack.
  • Decorate with royal icing.
