Steak and Blue Cheese Bites combine the bold flavor of blue cheese with figs, and tender grilled steak for a very tasty appetizer.

- 6 ounces beef tenderloin steak
- 4 ounces Blue Cheese (125 grams) cut into 12 slices
- 1 container crescent roll dough
- 4 dried figs sliced (make 12 slices)
- 2 sprigs fresh thyme
- 2 cloves garlic smashed
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon kosher salt
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1 green onion or chives chopped for garnish
Prepare the steak
Generously season the steak with salt and pepper.
Heat olive oil and butter in a large cast-iron skillet over medium-high heat.
Add the steak, sprigs of thyme and garlic.
Sear the steak on both side for about 3 minutes per side.
While the steak is cooking, spoon the hot butter and oil over the steak.
Remove from the skillet and let rest for 10 minutes.
Preparing the steak bites
Preheat the oven to 350ยบ F.
Line a baking sheet with parchment paper.
Slice the steak into 12 even pieces. (about 1" long & 1/4" thick)
Unroll the crescent dough and cut into 12 triangular pieces.
Cut the blue cheese and figs into 12 even slices.
Place a slice of steak on the wide side of the crescent triangle.
Top with a slice of dried fig and Blue Cheese.
Roll tightly and place on the prepared baking sheet.
Bake for 15 minutes or until golden brown.
Garnish with fresh chopped green onion or chives.
