Ingredients

  • 1 1/2 cups butter room temperature
  • 1 1/2 cups granulated sugar
  • 1 teaspoon pure vanilla extract
  • 2 eggs + 1 egg yolk
  • 3 3/4 cups all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 40-50 red hard candies such as lifesavers or Jolly Ranchers

Instructions

  • Sift together flour, baking powder and salt.
  • Using electric mixer beat the butter and sugar until fluffy, about 5 minutes.
  • Add the vanilla and eggs. Combine well.
  • Add the flour mixture a bit at a time, blend until combined.
  • Separate the dough into 3 disks, wrap with plastic wrap and refrigerate for at least 30 minutes.
  • When ready to bake preheat the oven to 350ยบ F.
  • Crush hard candies into small bits. I place the candies in a heavy ziplock bag and pound with a mallet.
  • Line cookie sheets with parchment paper. You must use parchment paper or the candy will stick and make a mess!
  • On lightly floured working surface roll the cookie dough to 1/4 inch thickness.
  • Using a large heart-shaped cookie cut the dough, then using a smaller heart-shaped cookie cut dough out of large heart shape.
  • Place the cookies on the parchment lined cookie sheet.
  • Fill the centers with crushed candies, be careful to not spill any crushed candies onto the cookie dough.
  • Bake for 8-10 minutes. Just until the edges start to brown.
  • Cool completely before removing from cookie pan.
