Ingredients

  • 10 links breakfast sausages
  • 8 strips of bacon
  • 1 tbsp butter
  • 1 1/2 cups potatoes diced
  • 1/2 cup green onion
  • 1/2 cup green peppers chopped
  • 1/2 cup red peppers chopped
  • 1 1/2 cups fresh mushrooms sliced
  • 6 eggs
  • 1/4 cup milk
  • salt and pepper
  • 1 1/2 cups cheddar and mozzarella cheese shredded mix

Instructions

  • In a large skillet over medium heat cook the sausages until done and nicely browned, about 8-10 minutes.
  • Remove from the pan and cut into 1/2 inch pieces, set aside.
  • In the same pan cook the bacon until crisp. Cut into bite size pieces and set aside.
  • Using the pan drippings, fry the potatoes until tender.
  • Add onions, peppers and mushrooms. Cook for 5-6 minutes until softened.
  • Add the sausage and bacon back into the skillet.
  • In a large bowl, beat the eggs, milk, salt and pepper together. Pour over the skillet mixture.
  • Cook, stirring gently until the eggs are cooked and set.
  • Top with the shredded cheese and cover until melted. Another option is to place the skillet (uncovered) in the oven and use the broil setting to melt the cheese.
