These Fruit Pizza Cookies are simple and perfect to decorate with kids. The combination of a soft, buttery sugar cookie-inspired crust, tangy-sweet cream cheese frosting, and vibrant assortment of fruit is irresistible!
16ouncesCream Cheese (Full Fat)softened to room temperature
3/4cupGranulated Sugar
1/2teaspoonLemon Juice
2teaspoonsVanilla Extract
Toppings (Around 800 grams assorted fruits. My favorite fruits to use are below)
Canned Mandarin Orangeshalved lengthwise
Purple Grapeshalved lengthwise
Kiwi Fruitpeeled and thinly sliced
Strawberriessliced thinly lengthwise
Instructions
Crust
Preheat the oven to 350 degrees Fahrenheit. Line baking sheet with parchment paper.
In a large mixing bowl, combine flour, confectioners sugar, baking powder, salt and granulated sugar.
Using a mixer low speed, add the butter and mix until course crumbles form, 1-2 minutes.
Add eggs and vanilla, mix just until the dough starts to come together. About 1-2 minutes.
In the bowl, kneed the dough with your hands until it comes together to form a soft dough.
If the dough is too sticky knead in some extra flour until the dough is no longer sticky.
Dust countertop with flour. Roll out the dough until it is approximately 1/4 inch thick.
Cut out dough with a 3.5 inch circular shaped cookie cutter.
Gather the remaining dough scraps and re-roll until all the dough is used.
Place the cookies on the prepared baking pan spacing generously. You will be able to fit 8 mini pizzas on the pan at a time so baking in batches will be needed.
Bake on the middle rack of the oven for 12-15 minutes, until the edges of the dough turn golden brown.
Cool cookies completely before topping with cream cheese spread.
Cream Cheese Frosting
In a medium mixing bowl, beat the cream cheese, sugar, and vanilla on medium-high speed for 2 minutes.
Decorating the Pizza
Spread a layer of frosting evenly onto each cookie. The frosting should be thick.
Decorate the pizzas with fruit.
Serve immediately or store in the refrigerator.
Notes
I recommend only adding the fruit when you are ready to serve. This ensures your pizzas maintain a fresh appearance and prevent the juices from bleeding into the frosting.
