A Creamy Rice Pudding recipe that is easy to make with just a few simple ingredients.

Ingredients

  • 4 cups milk 2%
  • ½ cup white rice
  • 1/4 cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • ½ cup heavy cream
  • 1/2 teaspoon ground cinnamon optional

Instructions

  • In a large saucepan, combine the milk, rice, sugar, vanilla and cinnamon.
  • Bring to a boil, then reduce the heat to medium low temperature.
  • Simmer the rice uncovered for about 30 minutes, stirring occasionally until the rice is tender and most of the milk is absorbed.
  • The pudding should be a thick creamy liquid. It will set more once refrigerated.
  • Remove the mixture from the stove and pour into a bowl, cover in plastic wrap and refrigerate until cooled and set.
  • Prior to serving - beat the heavy cream until soft peaks form. Stir the whipped cream into the rice pudding. a
  • Garnish with fresh raspberries and serve.
