A Creamy Rice Pudding recipe that is easy to make with just a few simple ingredients.

- 4 cups milk 2%
- ½ cup white rice
- 1/4 cup granulated sugar
- 1 teaspoon pure vanilla extract
- ½ cup heavy cream
- 1/2 teaspoon ground cinnamon optional
In a large saucepan, combine the milk, rice, sugar, vanilla and cinnamon.
Bring to a boil, then reduce the heat to medium low temperature.
Simmer the rice uncovered for about 30 minutes, stirring occasionally until the rice is tender and most of the milk is absorbed.
The pudding should be a thick creamy liquid. It will set more once refrigerated.
Remove the mixture from the stove and pour into a bowl, cover in plastic wrap and refrigerate until cooled and set.
Prior to serving - beat the heavy cream until soft peaks form. Stir the whipped cream into the rice pudding. a
Garnish with fresh raspberries and serve.
