Filling
- 4-5 apples
- 1/4 cup granulated sugar
- 1/4 cup brown sugar
- 1 1/2 teaspoons ground cinnamon
- 1 tablespoon Minute tapioca
Cobbler Topping
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- ½ teaspoon salt
- 1 cup cold unsalted butter cubed
- 3/4 cup heavy cream
Apple Filling
Peel and slice apples.
Toss together the apple slices, granulated sugar, brown sugar, cinnamon and tapioca.
Set aside while you make the cobbler topping.
Cobbler Topping
In a large bowl, whisk together flour, 1/2 cup sugar, baking powder, 1 teaspoon cinnamon and salt.
Cut the chilled butter into small cubes. Using a pastry blender cut the butter into the flour mixture until it forms large, course crumbs.
Gradually add the cream and mix just until the dough comes together. Do Not overmix!
The dough should be slightly sticky and large globs.
Pour the apples into the baking dish or divide equally in individual baking dishes.
Drop the dough by heaping tablespoons over the apples.
Leave in clumps, do not smooth out.
Place the baking dish on cookie sheet or foil, to catch juices that tend to bubble out.
Bake in 350º F oven for 50-60 minutes. The cobbler topping should be nicely browned and the fruit bubbling.
Serve warm with a scoop of ice cream or whipped cream.
