Bacon Wrapped Pork Tenderloin Medallions

Pork tenderloin is a flavorful and lean cut of meat. The key to cooking pork tenderloin is to make sure you don’t over-cook it or it will become dry and tough. Pork is fully cooked when it reaches an internal temperature of 165º F. Take the guess work out of perfectly cooking meat by investing in an instant-read meat thermometer.

How to cook bacon wrapped pork tenderloin.

My preferred method is to grill on the BBQ. In addition to getting a nice sear on the tenderloins, the BBQ is quick and easy to use.

Another option is to roast the pork in the oven. Start by pan-searing the medallions, then transferring to the oven to finish cooking. Bake in a preheated oven at 350º F.

Can I use an air fryer? This is also a great roasting method. The cooking time can vary depending on how thick the individual pork tenderloin cuts are. Generally, cook at a temperature of 375º F for 20- 30 minutes.

Ingredients:

  • Pork Tenderloin – this lean, tender cut of meat is also called pork fillet. It can be purchased whole or in pre-cut pieces. Medallions should be cut to 2-inch thickness.
  • Bacon – 10-12 strips of thin sliced bacon. The smokey bacon adds a savory flavor and the extra fat helps to keep the lean pork moist.
  • Seasoning – a mixture of garlic powder, onion powder, dried oregano, salt and pepper.

Ingredients
  

  • 1 1/2 pounds pork tenderloin cut into six 2 inch thick medallions
  • 10-12 strips of bacon
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dry oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions
 

  • Slice the pork tenderloin into 6 medallions about 2 inches thick.
  • Combine the garlic powder, onion powder, oregano, salt and pepper.
  • Generously season all sides of the medallions with the spice mixture.
  • Wrap the pork medallions with the bacon slices. Secure with a toothpick.
  • Preheat the barbecue.
  • Place the bacon-wrapped pork tenderloin on one side of the BBQ. Sear for about 1 minute per side. Turn the burner off on the side the meat is on, leaving other burner on medium-high heat. This is an indirect cooking method for grilling. Grill for about 10 minutes per side.
  • Cook until the meat reaches an  internal temperature of 165º Fahrenheit.

Method for cooking Bacon Wrapped Pork Tenderloin in the oven

  • Preheat oven to 350º F.
  • Heat olive oil in a heavy skillet, medium-high heat. Add the pork tenderloins and sear on both sides. (about 2 minutes per side)
  • Transfer to an oven-proof grilling pan.
  • Place in the oven and roast for about 30 minutes until pork reaches an internal temperature of 165º F.
