Fuel To Go Pancakes

Fuel to Go Pancakes are super healthy and loaded with hemp and chia seeds, dried fruit, fresh apple, coconut, whole wheat flour and more nutritious ingredients!

Start your day off right with healthy breakfast pancakes. Fuel to Go Pancakes are loaded with nutrient dense ingredients. They even make a great lunch! Serve with some fresh berries or wholesome pure maple syrup.

I created this recipe with a collection of ingredients I used in my Fuel to Go Muffins and Fuel to Go Protein Bars. The chia, hemp, sunflower and pumpkin give these pancakes a bit of crunch. The dried blueberries, cranberries, pineapple, and fresh apple add a bit of sweetness. A touch of pure maple syrup enriches the sweet flavor while still keeping these pancakes super healthy!

Ingredients
  

  • 1 1/2 cups whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 tablespoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup unsweetened shredded coconut
  • 1 tablespoon Hemp seed
  • 1 tablespoon Chia seed
  • 2 tablespoons pumpkin seeds
  • 2 tablespoons sunflower seeds
  • 1/4 cup dried blueberries
  • 1/4 cup dried cranberries
  • 1/2 cup crushed pineapple well drained
  • 1/2 cup apple shredded
  • 1 1/2 cups milk
  • 1 egg
  • 2 tablespoons pure maple syrup

Instructions
 

  • In a large bowl combine the flour, baking powder, baking soda, cinnamon, salt, coconut and all the seeds and dried fruit.
  • Stir in the pineapple and apple, combine well.
  • In a separate bowl whisk the milk, egg and maple syrup.
  • Add the egg mixture to the dry ingredients and combine well.
  • Pour a scoop of the batter on a heated griddle or non-stick skillet.
  • Flip when nicely browned on bottom, then continue to cook until done. These pancakes will take longer to cook than regular pancakes.
  • Serve with fresh berries and pure maple syrup.
